About Potato Recipes Field

Why this site exists

You’re standing in your kitchen, a recipe in hand, and nothing turns out as promised. The texture is off, the flavors don’t sing, or the instructions assume tools you don’t own. The recipe feels less like a guide and more like a puzzle with missing pieces.

This site cuts through the guesswork. Every recipe here is tested, tweaked, and retested until it works—not in a perfect lab, but in a real kitchen with real limitations. No shortcuts, no gimmicks. Just food that tastes good and won’t leave you frustrated.

Who writes this site

Fiona Novak

Fiona Novak is the founder and editor.

Do you test every recipe yourself?

Yes. Even the ones I’ve made a hundred times. Rules are for people who don’t know their way around a kitchen yet.

What’s the worst mistake you’ve made in a recipe?

Underseasoning. I’d rather have someone say ‘too salty’ than ‘boring.’ And I’ve burned more than one batch of cookies trying to rush them.

Why isn’t a popular dish here?

Either I haven’t figured out how to make it work for home cooks, or it’s not something I’d serve at my own table. No pressure-cooker shortcuts, no ‘artisanal’ nonsense.

There’s always a pot of tea steeping while something simmers. And if you walk in mid-morning, you’ll find me standing at the stove, stirring nothing in particular, pretending I know what I’m doing.

How a recipe is built

It starts with a question: *What’s the one thing that always goes wrong?* A crust that cracks, a sauce that separates, a roast that’s dry. Then the fixing begins.

The first draft

Sliced open to check the middle

I make it exactly as written—no cheating. If it fails, I note why: was it the heat? The timing? The wrong pan? Then I adjust one thing at a time. No multitasking. No ‘close enough.’

The second try

This is where the real work happens. Maybe it’s letting the dough rest longer, or using a splash of vinegar to tighten the sauce. Or realizing the recipe assumed a gas stove and you’re on electric. Every change gets tested again.

What we will not do

This isn’t a place for food photography contests, influencer trends, or recipes that require a PhD in culinary arts. No ‘5-ingredient wonders’ that taste like sadness. No ‘foolproof’ methods that only work if you ignore half the steps.

Things you will never find here

  • Recipes with more than 10 ingredients (unless it’s a stew or a casserole).
  • Dishes that need a stand mixer, a food processor, or a gadget with a name longer than its function.
  • ‘Quick’ meals that take longer to assemble than to cook.
  • Anything that can’t be made with a single pot, a sheet pan, or a cast-iron skillet.

Where to start

Browse the ‘Starter Dishes’ section if you’re new. The ‘Troubleshooting’ tag is for when things go wrong. And if you can’t find what you’re looking for, try the search bar—or ask. The contact page is there for that.

Say hello

I like hearing about the dishes you’ve remade, the tools you swear by, or the ones you’ve given up on. And if you’ve got a recipe that’s been let down by bad advice, tell me about it. The contact page is the place.

The recipes are grouped by category: Appetizers, Beverages, Breakfast & Brunch, Desserts, Main Courses and Salads.
